Questa particolare "marmellata" nera tradizionale è da generazioni una delle ricette della tradizione popolare bolognese. Viene utilizzata normalmente per farcire dolci, come la Pinza o le Raviole sia al forno che fritte, oppure nella versione con senape, per insaporire i classici bolliti di maiale e gli insaccati cotti.

E' un procedimento lungo che richiede diversi giorni di lavoro (3), in quanto la densità estremamente compatta la si ottiene con molte brevi cotture e lenti riposi.
